1 cup sliced mushrooms, 2 tbsp butter, 1 small chopped onion, 2 cloves minced garlic, 1 cup shredded cheese, 4 large tortillas, salt, pepper, sour cream, salsa, avocado, cilantro.

Heat butter in a pan over medium heat. Add sliced mushrooms and cook until tender.

Add chopped onion and minced garlic to the pan and sauté until softened.

Place a tortilla in a pan, add sautéed mushrooms and onion, and sprinkle shredded cheese.

Fold the tortilla in half and cook for 2-3 minutes or until the cheese is melted and the tortilla is crispy.

Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy and golden.

Serve hot with your favourite toppings such as sour cream, salsa, avocado, and cilantro.
