You’ll need cooked pasta, cherry tomatoes, cucumbers, bell peppers, olives, red onions, and feta cheese.
For the dressing, mix olive oil, vinegar, Dijon mustard, minced garlic, salt, pepper, and a sprinkle of Italian herbs. Whisk until combined.
Chop cherry tomatoes, cucumbers, bell peppers, red onions, and olives. Crumble some feta cheese for that creamy texture.
In a large bowl, toss together the pasta, veggies, and feta cheese. Drizzle the dressing and mix well.
Refrigerate the salad for at least 30 minutes to let the flavors blend. It tastes even better when served cold!
Serve as a side dish or enjoy it as a light meal. Garnish with fresh basil or parsley for an extra touch.
