Grated pumpkin, coconut milk, jaggery or brown sugar, ghee, cardamom powder, cashews, raisins, water.
Grate the pumpkin finely. This helps it cook faster and blend well with the milk.
In a pan, heat 1 cup of water. Add the grated pumpkin and cook for 5-7 minutes until soft.
Add 1/2 cup coconut milk and 1/2 cup jaggery (or sugar). Stir well and let it cook for another 5 minutes.
Add 1 tbsp ghee and 1/4 tsp cardamom powder to enhance the flavor.
Your delicious pumpkin payasam is ready! Serve warm and enjoy a sweet, festive treat.
