– Mixed dried fruits (raisins, cherries, apricots): 2 cups – Nuts (walnuts, almonds): 1 cup – All-purpose flour: 2 cups – Butter: 1 cup – Sugar: 1 cup – Eggs: 3 – Baking powder, Cinnamon & nutmeg 1 tsp – Orange juice: 1 cup
– Soak the dried fruits and nuts in orange juice (and rum if using) for 24 hours. – This infuses flavor and keeps the cake moist.
– Cream butter and sugar until fluffy. – Add eggs one by one, beating well after each. – Mix in flour, baking powder, and spices.
– Fold in the soaked fruits and nuts. – Pour the batter into a greased cake tin. – Bake at 180°C (350°F) for 50-60 minutes until a skewer comes out clean.
– Let the cake cool completely before slicing. – Serve with tea or coffee for the perfect holiday treat!
