Start by chopping the onion, garlic, and ginger. Dice the pineapple into small chunks.
Heat oil in a pan. Add chopped onions, garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
Stir in the turmeric, cumin, and curry powder. Cook for 1 minute, letting the spices release their aroma.
Now, add the diced pineapple, coconut milk, and vegetable broth. Stir it all together.
Once ready, garnish with fresh cilantro and serve hot with rice or naan. Enjoy this tropical treat.
