- 1 cup boiled sweet corn - 4 slices of bread - 1/2 cup grated cheese (cheddar or mozzarella) - 1/4 cup finely chopped capsicum - 1/4 cup finely chopped onion - 1/2 tsp chili flakes - 1/2 tsp mixed herbs or oregano - Salt & pepper to taste - Butter for toasting
In a bowl, mix the boiled corn, grated cheese, chopped capsicum, onion, chili flakes, herbs, salt, and pepper.
Add veggies like tomatoes, olives, or jalapenos for extra flavor!
Spread the corn-cheese filling on one slice of bread. Top with another slice.
Butter both outer sides of the sandwich and place on a preheated pan or grill. Toast until golden brown.
Cut in half, serve with ketchup or chutney, and enjoy your warm, cheesy corn sandwich!
