Boil pasta in salted water until al dente. Drain and set aside, reserving some pasta water.
Heat olive oil in a pan, add chopped tomatoes, and sauté until soft and slightly reduced.
Stir in salt, black pepper, Italian seasoning, and a pinch of red chili flakes for some heat.
Add diced bell peppers, zucchini, or spinach to the tomato base and sauté for 3-4 minutes.
Toss the cooked pasta into the sauce, mixing well. Add reserved pasta water for desired consistency.
Stir in heavy cream or grated cheese to create a creamy, smooth sauce for the pasta.
Garnish with fresh basil or parsley and serve hot, optionally adding more grated cheese on top.
