Lingkan Reang
Marinate mutton with salt and lemon juice (optional overnight).
Whisk curd with spice paste ingredients and set aside.
Heat ghee, add tempering spices, and brown mutton in batches.
Add all mutton back, mix in the curd paste, and cook for 10 minutes.
Add water, adjust salt, simmer covered for 2 hours.
Serve tender mutton with rice or roti.
