Broccoli (500g), onion, garlic, potato, 1L stock, 200g Stilton, olive oil, salt, pepper, nutmeg, milk/cream, lemon juice.
Chop the onion, garlic, broccoli, and potato. Ready to go.
In a large pot, melt 2 tbsp butter over medium heat. Add onion & garlic, cook until soft and fragrant.
Add chopped potatoes and vegetable stock. Bring to a boil, then simmer for 10 minutes.
Add the broccoli and cook for another 8-10 minutes, until tender.
Add the Stilton cheese and stir until melted and creamy.
Season with salt & pepper to taste. Serve hot, garnish with extra Stilton.
