Wash and soak rice for 30 minutes, then drain and set aside.
Heat oil or ghee, add whole spices, and let them sizzle for a minute.
Saute onions until golden, then add green chillies, ginger garlic paste, and cook for a minute.
Add veggies, toss until cooked, then mix in coriander, mint, and yogurt.
Add water, salt, and bring to a boil. Add rice, cover, and simmer for 20 minutes.
Fluff rice, mix in fried bread, cover.
Let sit for 15 minutes before serving.
