Lingkan Reang
Butterfly and season a 2 kg chicken with spices.
Blend marinade ingredients and apply ¾ to the chicken.
Marinate for 10-15 minutes.
Sear the chicken on both sides in a hot, oiled pan.
Apply remaining marinade, drizzle with oil, and bake at 220°C for 15 mins, then 200°C for 1 hour, basting every 15 minutes.
Let rest for 15 minutes before carving.
