Lingkan Reang
Heat oil in a karahi.
Fry mutton on high heat until browned.
Saute minced ginger and garlic for 1-2 minutes.
Add spices, and water and bring to a boil.
Lower heat, cover, and simmer 2-2.5hrs, checking water levels.
Once meat is tender, reduce excess water by cooking on high heat.
Add diced tomatoes and cook on high until sauce thickens and oil rises.
Stir in chopped coriander and green chili, simmer for 5 minutes.
Top with more coriander and matchstick-cut ginger.
