Lingkan Reang
Heat oil in a suitable pan on a high flame.
Add chicken and fry until golden in spots.
Stir in minced ginger and garlic until the raw smell fades.
Add chopped tomatoes and spices, stirring well.
Cook on high heat for about 20 minutes until oil separates and the sauce thickens.
Add coriander and green chillies, simmer on low heat for 5 minutes.
Serve with matchstick-cut ginger and extra coriander/chillies if desired.
