Season the chicken breasts with salt, pepper, and oregano. Set aside.
Mix the lemon juice, lemon zest, minced garlic, and olive oil. Pour half of the marinade over the chicken and let it sit for 15–30 minutes.
Heat a large pan over medium heat and add a bit of olive oil. Sear the chicken breasts for 3–4 minutes per side until golden brown.
Once seared, reduce heat to low, cover the pan, and cook for 6–8 more minutes until the chicken is fully cooked through.
Pour the rest of the lemon marinade over the chicken and let it simmer for another 2–3 minutes to soak up the flavor.
Garnish with fresh parsley and serve with your choice of sides, like rice or vegetables. Enjoy!
