Preheat your oven to 350°F (175°C).
In a bowl, cream together softened butter, sugar, egg, and vanilla extract. Add sour cream and mix well to create a smooth base.
In a separate bowl, whisk flour, baking powder, baking soda, and cinnamon. Gradually add to the wet mixture and stir to combine.
Pour the batter into the pan. Top with cinnamon, sugar, or streusel for added crunch.
Place your cake in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
Allow your cake to cool for a few minutes. then decorate with your favourite toppings.
Serve the coffee cake warm or at room temperature, and enjoy with a cup of coffee.
