Sunny Priyan
1 cup sprouted beans, 1 onion, 2 tomatoes, 1 tbsp ginger-garlic paste, 2 green chilies, turmeric, red chili powder, garam masala, 1 tsp cumin seeds, mustard seeds, 1-2 bay leaves, Salt to taste.
Heat oil in a pan, splutter cumin, mustard seeds, add bay leaves, ginger-garlic paste, green chilies, and tomatoes. Saute onions until golden.
Stir in turmeric, red chili powder, garam masala, and salt. Cook for a minute.
Add sprouted beans, stir well, and add 2-3 cups of water . Cook until the beans are soft.
Let the mixture simmer until the flavors blend and the curry thickens to your liking.
Serve the curry in a bowl. Top with chopped onions, coriander, and a squeeze of lemon juice. Serve hot Misal with pav on the side, either toasted or plain. Enjoy!
