1 ½ cups flour, 1 tsp baking powder, ¼ tsp salt, ½ cup butter, ¾ cup sugar, 2 eggs, 1 tsp vanilla, 1 tsp peppermint extract, ½ cup milk, ½ cup mini chocolate chips, green food coloring (optional).
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Heat ghee in a pan.
In a bowl, whisk together flour, baking powder, and salt and set aside.
Beat softened butter and sugar until fluffy, then add eggs one at a time, mixing well after each.
Stir in vanilla and peppermint extracts, then gradually add dry ingredients alternately with milk.
Fold in mini chocolate chips and add green food coloring for a minty hue, if desired.
Spoon batter into liners (2/3 full), bake for 18-20 minutes, cool, and enjoy your minty chocolate goodness!
