Menemen is a flavorful and spicy omelette perfect for a festive breakfast or brunch.
4 eggs, 1 onion, 2 cloves garlic, 1 red bell pepper, 1 can diced tomatoes, 1 tsp paprika, salt, pepper, 2 tbsp olive oil.
Heat ghee in a pan.
Heat olive oil in a pan and sauté the onion, garlic, and red bell pepper until softened.
Add the diced tomatoes, paprika, salt, and pepper. Stir well.
Crack in the eggs and scramble them with the vegetable mixture.
Add some heat with red pepper flakes or sliced jalapeños Serve with crusty bread or pita for a filling breakfast.
