Wash the urad dal and soak it in water for at least 4-6 hours or leave overnight.
Drain the soaked urad dal, grind it into a smooth, thick batter with minimal water.
Mix chopped green chilies, grated ginger, curry leaves, chopped onions, coriander leaves, and salt to the batter.
Heat the oil in a pan to fry the vadas.
Wet your hands, shape the batter into a small ball with a hole in the center, and carefully slide the vada into the hot oil.
Fry the vadas. Fry them on medium heat for about 4-5 minutes or until they are golden brown and crispy on both sides.
Serve the hot Medu Vadas with coconut chutney and sambar for a crispy, delicious treat.
