200g paneer, 2 tbsp boiled & mashed potatoes, 1-2 tbsp cornflour or besan, salt, garam masala, chili powder to taste, and oil for frying.
Combine grated paneer, mashed potatoes, spices, and cornflour together. Shape into balls and deep-fry or air-fry until golden.
Saute tomatoes, onions and ginger-garlic paste until soft. Blend into a smooth paste.
Heat oil, add cumin and spices. Pour in the blended mixture and cook until oil separates. Add cream or cashew paste and mix well.
Adjust the gravy consistency with water. Let it simmer for a few minutes.
Drizzle chaat masala, add some onions and dipping sauces, and serve hot.
