Ingredients needed – 1 cup all-purpose flour, 1/2 cup sugar, 1/4 cup olive oil, 2 eggs, 1 medium cucumber, grated, 1 tsp baking powder, 1/2 tsp vanilla extract, and pinch of salt.
Grate the cucumber finely and squeeze out any excess water. This helps in keeping the cake moist without being soggy.
In a mixing bowl, beat the eggs, olive oil, and sugar until smooth. Add vanilla extract for a hint of sweetness.
In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients.
Fold in the grated cucumber gently into the batter, ensuring it’s evenly mixed.
Pour the batter into a greased cake pan and bake at 350°F (175°C) for 30-35 minutes, or until a toothpick comes out clean.
Once baked, let the cake cool for 10-15 minutes before removing from the pan. Let it cool.
Once cool, slice and enjoy your refreshing cucumber cake! Serve it as a unique dessert or a light snack.
