Blend Greek yogurt, tandoori seasoning, garlic, ginger, lime juice, chili powder, and optional dye.
Marinate turkey for 24 hours.
Mix red onion, celery, cilantro, and garlic.
Clean turkey, stuff it, coat with marinade, and refrigerate overnight.
Let sit for 1 hour, then roast at 400°F for 30 mins, reduce to 350°F until internal temp reaches 165°F.
Let turkey rest for 20 minutes before carving.
Make gravy from juices and serve with cilantro and pickled onions.
