Pound steaks to a thickness of 1/4 inch and prepare flour in a shallow bowl.
Mix baking powder, baking soda, pepper, salt, buttermilk, tabasco, egg, and garlic in another bowl.
Heat shortening in a cast-iron skillet to 325°F (165°C).
Dredge steaks in flour, dip in the buttermilk batter and coat again in flour.
Fry the breaded steaks until golden brown, then drain on paper towels.
Make gravy with the reserved oil and flour, then pour it over the steaks before serving.
