Clean the chicken, trim excess fat, and place in the slow cooker.
Roughly chop cabbage, onion, garlic, and ginger, then add to the slow cooker.
Fill the slow cooker with water (about 8 cups), and season with salt and pepper.
Cover and cook for 4 hours on high or 6 hours on low.
Cut scallions into 2-inch pieces and add to the soup a few minutes before it's done.
Spoon off excess fat or use a fat separator, and strain broth if desired.
