Marinate chicken with soy sauce, vinegar, and ginger garlic paste for 30 minutes.
Cook chicken in hot oil until golden, then set aside and slice.
Saute onions and ginger garlic paste in oil, then add mushrooms and cook.
Add stock, soy sauce, vinegar, and bring to a boil.
Cook noodles and blanch spinach in boiling water.
Serve noodles with broth, topped with chicken, spinach, and eggs, season with pepper.
