Make Simple Cauliflower Chicken Fried Rice At Home

Heat 1 tsp oil in a wok, add eggs, cook for 30 seconds, flip, then cook for 15 seconds. Cut into pieces.

Add 1 tbsp oil, scallion whites, ginger, and garlic, stir-fry for 30 seconds.

Add chicken, and stir-fry for 1 minute.

Add bell pepper and snow peas, stir-fry until tender, 2-4 minutes.

Add 1 tbsp oil, cauliflower rice, stir until soft, about 2 minutes.

Return chicken and eggs, add tamari and sesame oil, stir, and garnish with scallion greens and serve.
