Slice chicken breast into strips, mix with soy sauce and garlic.
Cut potato into half-moons, tofu into 1/2-inch slices, and scallions into 1-inch pieces.
Saute chicken in a pot until browned.
Add 6 cups water, bring to a boil, skim foam, and simmer for 5 minutes.
Add potatoes, tofu, salt, and pepper, and cook until potatoes are tender.
Add noodles and scallions, boil for 1-2 minutes, then serve.
