Gather sugar, ghee, gram flour, all-purpose flour, and cardamom powder for authentic soan papdi.
Boil sugar and water to make a thick syrup with a soft ball consistency.
Roast gram flour and all-purpose flour in ghee until golden and fragrant.
Add the sugar syrup to the roasted flour mixture while stirring quickly to avoid lumps.
Knead the mixture and pull it into fine, flaky strands for the signature texture of soan papdi.
Press the mixture into a greased tray and cut it into square pieces before it hardens.
Top with chopped pistachios or almonds and enjoy your homemade, flaky soan papdi.
