Marinate chicken pieces with salt, pepper, and a splash of soy sauce for 30 minutes.
Prepare batter by mixing flour, cornstarch, and water into a thick, smooth consistency.
Heat oil in a deep pan or fryer to 350°F (175°C).
Coat chicken pieces in the batter and fry in batches for 6-8 minutes until golden and crispy
Make the sauce by simmering soy sauce, gochujang (Korean chili paste), honey, garlic, and vinegar until thickened.
Double fry chicken for an extra 3-4 minutes for extra crispiness.
Toss chicken in the sauce and serve hot with a sprinkle of sesame seeds.
