Toss, bake for another 25 minutes, and ensure chicken reaches 165°F.
Broil potatoes until crispy, then transfer to a platter with chicken.
Deglaze the pan with broth, scrape browned bits, and strain juices.
Pour juices over chicken and potatoes, garnish with oregano, and serve.
