Preheat the oven to 400°F and prepare the tofu by draining and drying it.
Cut the tofu into 1-inch cubes and toss with soy sauce.
Coat the tofu with cornstarch and breadcrumbs.
Bake on a tray for 30-35 minutes until golden brown.
Meanwhile, saute minced garlic in oil, then add soy sauce, honey or maple syrup, rice vinegar, water, and sesame oil.
Thicken the sauce with cornstarch and water, then toss with the baked tofu.
Serve over rice with steamed broccoli or enjoy as it is!
