Prepare Slow Cooker Mexican Chicken and drain excess liquid.
Preheat oven to 400°F, line a baking sheet with foil and place a rack on top.
Fill each tortilla with ½ cup chicken filling, add cheese, and roll up burrito-style.
Place burritos on the rack and brush with olive oil, bake for 18-20 minutes until golden.
In a saucepan, melt butter in olive oil, whisk in flour, then gradually add chicken broth and spices, simmer until thickened.
Stir in green chilies, cheese, and sour cream, serve burritos topped with sauce and desired toppings.
