Soak mushrooms in boiling water for at least 30 minutes, slice and set aside.
Heat oil in a large pot, then add onion, garlic, and ginger, cook for 5 minutes.
Add reserved mushroom liquid, broth, soy sauce, cinnamon stick, star anise, and pepper, bring to a boil.
Reduce heat, stir in chicken, and simmer for 20 minutes.
Add fennel, scallion whites, and mushrooms, cook for 5 minutes, then add bok choy stems and greens.
Discard spices, ladle soup into bowls, and garnish with scallion greens, cilantro, and sesame oil, serve with lime wedges.
