Preheat the oven to 180C and prepare the pumpkin by cutting off the lid and scooping out seeds.
Place the pumpkin on a sturdy baking tray and bake according to size.
Mix grated cheeses with cornflour until coated, set aside.
Remove the pumpkin from the oven, discard the lid, and increase the temperature to 200C.
Layer cheese, creme fraiche, white wine, shallot, and garlic inside the pumpkin.
Bake for 30 minutes until melted and bubbling, enjoy scooping with soft pumpkin!
