Wash rice and dal well, set aside.
Heat oil in a pressure cooker, saute tempering ingredients for 1 minute.
Add onions, tomatoes, and cook for 5 minutes.
Add salt, sugar, spices, and saute for 1 minute.
Add veggies, cook for 5-10 minutes, then pour in water, rice, dal, and tamarind extract.
Pressure cook for 5 whistles, simmer for 15 minutes, then mix in ghee and serve with papad and pickle.
