Mix all-purpose flour, gram flour, baking soda, ghee, yoghurt, and water to create a smooth batter.
Prepare the syrup by boiling sugar, water, cardamom, and saffron until it reaches a one-string consistency, then stir in lemon juice.
Pour the rested batter into a condiment bottle with a small opening.
Heat oil in a frying pan, test temperature with a drop of batter.
Squeeze the batter into spirals, frying until golden brown, then soak in warm syrup.
Garnish the jalebis with pistachios, coconut and rose petals before serving.
