• 1-liter full-fat milk • 4-5 tbsp sugar • 2-3 tbsp condensed milk • 2 tbsp plain yogurt (for culture) • 1/2 tsp cardamom powder (optional)
Start by boiling the milk in a heavy pan over medium heat. Stir it frequently to avoid burning.
Once the milk comes to a boil, reduce the heat and let it simmer until it thickens slightly. This should take about 20-30 minutes.
Add sugar and condensed milk to the thickened milk, stirring until the sugar dissolves completely. Let it cool to room temperature.
Once the milk cools to room temperature, add a couple of tablespoons of plain yogurt to the milk and mix well to help set the Mishti Doi.
Pour the mixture into small clay or ceramic bowls and cover them. Let it set in a warm place for 6-8 hours or overnight.
Once set, refrigerate for a few hours to chill, and your homemade Mishti Doi is ready to serve! Enjoy the sweet, creamy delight.
