Boil chicken bones and ginger, simmer for 6 hours, then strain and add kombu, sake, and miso.
Boil eggs for 7 minutes, cool in ice water, and peel gently.
Soak peeled eggs in a marinade of soy sauce mixture for 1-2 hours or overnight.
Salt and brown chicken brest, then simmer in sauce for 45 minutes to 1 hour.
Slice green onions, menma, and chicken breast & halve marinated eggs.
Boil ramen noodles for 90 seconds, then transfer to a bowl.
Add broth and toppings, and enjoy!
