Whisk eggs and sugar until light and fluffy.
Beat eggs & sugar until light and airy. This gives madeleines their delicate texture.
Gently fold in flour and baking powder. Keep it light and fluffy.
Scoop the batter into a large piping bag, then cut the tip off the piping bag.
Spoon batter into a buttered madeleine pan. Bake at 375°F (190°C) for 10–12 mins.
Slice and serve with tea or coffee. Every bite is filled with romance and Persian flavors.
