Low Calorie High Protein Chicken Meal Recipe

Preheat oven to 200C. Heat 1 tbsp oil in a casserole and cook chicken skin-side down for 5-6 mins until golden. Set aside.

Add 1 tbsp oil, then saute spring onions, garlic, and ginger for 4-5 mins until softened.

Stir in rice to coat in oil, then add stock.

Place the chicken on top of the rice, skin-side up.

Cover and bake in the oven for 20 mins.

Serve topped with coriander and crispy chilli oil.
