Light And Airy Pancakes For A Sweet Morning Treat

Prepare the Dry Ingredients

In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Mix Wet Ingredients

In another bowl, whisk the eggs and milk together until well combined. Then add the melted butter and vanilla extract (if using).

Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently with a fork until just combined; it's okay if there are a few lumps. Avoid overmixing to keep the pancakes fluffy.

Heat The Pan

Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter.

Cook The Pancakes

Using a ¼ cup measuring cup, pour batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 1-2 minutes. Flip and cook for another minute or until golden brown.
