To make these cutlets, you will need 1 cup tightly packed cooked rice. Take the rice in a mixing bowl.
Add ½ cup tightly packed mashed potatoes. Both the potatoes as well as rice have to be at room temperature
Add chopped onions, veggies, ginger-garlic paste, salt, and pepper. Mix well.
Shape the mixture into small cutlets or patties.
Fry the cutlets in hot oil until golden brown and crispy.
Crispy, golden rice cutlets are ready to serve! Perfect with chutney or sauce.
