Heat ghee in a kadai or pan. Add 1 medium chopped or grated semi ripe papaya. Cook on low heat.
Add 5 tablespoons sugar. Then, stir and continue to cook for 18 to 20 minutes on low heat.
Mash the papaya with a potato masher directly while cooking.
Add 2 tablespoons almond powder, ½ teaspoon cardamom powder and stir to mix.
Cook for 5 to 6 minutes more or till the halwa comes together.
Add 12 to 15 halved cashews and cook for 1 to 2 minutes more.
Serve Papaya Halwa hot or warm.
