Toast 2 slices of bread in 1 tbsp butter until crispy on both sides, then set aside.
Mix cabbage, carrot, spring onion, salt, pepper, and egg in a bowl.
Cook the egg-vegetable mixture in 1 tbsp butter, shaping it into a square, on low heat for 2-3 minutes per side.
Shape the veggie patty into a square while the egg cooks, then remove both from the pan.
Assemble the sandwich with toasted bread, veggie patty, tomato ketchup, and a sprinkle of sugar.
Top with the second slice of bread, cut into diagonals, and serve.
