Boil 2 cups water with tea leaves, cardamom, and cinnamon until reduced by half.
Add 1 cup water, boil again, then simmer for 10 minutes.
Stir in baking soda and simmer for another 10-15 minutes.
Add ice water, boil while aerating until a red hue forms, then strain.
For serving, heat 2/3 cup milk to boil and mix with 1/3 cup tea.
Add salt, adjust flavours, and garnish with whipped cream and pistachios if desired.
