You need a 1 kg mutton, 1 onion, chopped potatoes, some spices, 2tsp ghee, 1 cup yogurt, 2 tomatoes, green chili, ginger, cilantro, garlic and salt per taste.
Sauté the goat/lamb meat with some salt so that it sears nicely. This helps build flavor.
Add the garlic and ginger and sauté until aromatic.
Then add onion, tomatoes, green chili, whole and ground spices, and salt. Mix it well.
Add water and bring it to a boil. Cover and simmer over low heat to help get the meat nice and tender.
Increase the heat to high and sauté out the remaining water moisture. Once the water has evaporated, continue to sauté for another 5-6 minutes.
Lastly, stir in the yogurt and add the potatoes and water. Cover and allow the potatoes to cook until fork tender.
That’s it! You’re done. Garnish with garam masala and cilantro. Serve and enjoy.
