Take chicken out of the fridge 30 minutes before cooking and preheat the oven to 220C/450F.
Mix butter ingredients and add juice from 2 lemon wedges.
Loosen the skin from the chicken and drizzle butter under the skin, saving some for the surface.
Stuff the chicken with used lemon wedges and rosemary, then tie drumsticks and tuck wings.
Season with salt and pepper, place onion and garlic in the pan and add wine and oil.
Roast for 1 hr 25 min, basting twice, then rest for 15 minutes and serve with pan juices.
