Peel, chop, and boil potatoes with salt until tender, drain and set aside.
Heat oil in a kadai, add whole spices and seasoning, and let them sizzle.
Add boiled potatoes and salt, toss well in the oil.
Mix in spice powders and cook for 4-5 minutes.
Add amchoor powder and coriander leaves, toss to combine.
Serve hot as a side dish or snack.
