– 1 cup sweetcorn kernels – 1/2 cup all-purpose flour – 1/4 cup cornflour (optional, for extra crisp) – 1 egg – 1/4 cup milk – 1/4 tsp baking powder – 1-2 green chilies, chopped – 1/4 cup chopped scallions or onion – Fresh herbs, salt & pepper – Cooking oil
Combine flour, cornflour, baking powder, salt, and pepper in a bowl. In a separate bowl, whisk egg and milk, then mix it with the dry ingredients until smooth.
Fold in sweetcorn, green chilies, scallions, and fresh herbs for extra flavor.
Pour a few tablespoons of oil into a pan and heat it over medium.
Drop spoonfuls of batter into the pan, flatten slightly, and cook each side for 2-3 minutes until golden.
Place fritters on paper towels to absorb excess oil. Serve hot with a dip of your choice.
