Preheat the oven to 450°F.
Cut potatoes into 1/4-inch julienne strips.
Rinse the potatoes well and pat them dry.
In a large bowl, drizzle with oil and sprinkle with seasonings, then toss to coat.
Arrange the potatoes in a single layer on two greased baking pans.
Bake for 20-25 minutes, turning once, until lightly browned.
